Glass
Best for: Baking casseroles, pies, and tarts.
Heat conduction: Fair, but may burn foods with high sugar content, and won’t brown dishes easily. Glass needs a 15˚C lower oven temperature than other materials. The maximum oven temperature to be used is 175˚C. Pastry will not get as crisp in a glass dish as it will in a metal dish.
Versatility: Microwave, oven, freezer. Not for use under a broiler, stove top (hob), or in a toaster oven.
Temperature change: Cannot go from hot to cold and vice versa or it may crack. Do not add liquid to hot glassware.
Surface: Not non-stick but the pan can be greased. Glass does not react with ingredients.
Care: Breaks if not handled carefully.
Ability to change size/shape: No.
Clean: Allow to cool completely before cleaning or soaking. Glass does not discolour and is easy to clean.
