Silicone
Best for: Baking cakes, breads, and brioche.
Heat conduction: Poor. Baked goods tend not to brown in silicone.
Versatility: Should not be used with metal utensils. Can be used in the oven, freezer, toaster oven, and microwave.
Temperature change: Excellent, can go to high and low temperatures.
Non-stick surface: Excellent.
Care: Easy if metal utensils are not used with them. Do not cut anything while it is in the pan as you can easily cut through the silicone.
Ability to change size/shape: Yes. These roll up and are flexible, saving space in the cupboard. The only problem is that it can be difficult to handle silicone bakeware when filled with liquid: it is flexible, so can easily spill. Fill the silicone on a plate or tray, or buy with a frame (although then it is less easy to store).
Clean: Easy to clean: soak for a few minutes in soapy water, wipe with a cloth, and dry.
