Pots and Pans Material: Stainless Steel

 

Stainless steel is durable, strong, and easy to care for but does not conduct heat well.

 

Best for: Stock pots, pasta pots, couscoussier, fish kettle, and bain-marie. Equipment where the pot does not need to be as responsive to changes in heat.

Heat conduction: Does not conduct energy well.

Versatility: Good.

Temperature Change: Good. Can go to very high temperatures.

Non-stick surface: Can buy with Teflon or ceramic titanium non-stick coatings.

Care: Easy to keep clean and impervious to acid or alkali. Does not react with foods so will not affect their colour or flavour.

Clean: Easy to clean with hot soapy water. Stainless steel cleaner can be used for any discolouration.
