Best for: Great for cooking meat or vegetables without fat. The pot creates its own steam as it absorbs liquid so you need less liquid than cooking in a metal pot.
Heat conduction: Poor but holds heat well.
Versatility: Can be used in the microwave, oven, and toaster oven. Do not use on the stove top (hob) or under the broiler.
Temperature change: This material is highly sensitive to sudden temperature change. Heat it gradually in a cold oven.
Non-stick surface: No, it is porous.
Care: Cracks easily. Needs to be soaked before using. The oven should be 10 ̊ C cooler than stated in the recipe.
Ability to change size/shape: No.
Clean: When cool, soak in cold water with baking soda and scrub with a soft bristled brush. Dry thoroughly and store with a towel on the bottom and in between the pot and the lid to inhibit mould.
