250 Ricette delle Osterie d’Italia Slow Food Editore, Torino 2007

A great series of four books with recipes from local restaurants. It is written in Italian.

Artusi, Pelligrino Science in the Kitchen and the Art of Eating Well Random House, New York 1996

Artusi’s book is one of the fundamental books of Italian cooking and one of the first that attempted to document Italian cooking at home. Although the focus of the book is to include recipes from all over Italy for the time, his recipes tend to focus on Tuscany and Emilia-Romagna where he lived.

David, Elizabeth Italian Food Ebury Press, London 1996
